Parma-style White Truffles
- 3 ½ oz white truffle
- 1 lb Parmigiano Reggiano cheese
Clean the truffles with a brush to eliminate any earth and slice thinly using the appropriate tool. Put a layer of truffle in a buttered oven-dish, salt and cover with half of the Parmesan cheese reduced to flakes. Make a second layer of truffle, salt, and cover with the remaining Parmesan cheese. Put here and there some small flakes of butter and bake in a hot oven (350°) until a golden crust forms (about 15 minutes). Serve with toast.
