Pecorino with Broad Beans and Tomato
- 7 oz broad beans , soaked in water and boiled
- 7 oz Pecorino Toscano Cheese
- 1 tomato , ripe
- 6 tablespoons extra virgin olive oil
- black pepper , ground
Peel the tomato, after blanching it for a few minutes, and dice it. Salt it and allow to drain for some minutes.
Meanwhile, dice the Pecorino and mix together with the oil, salt and pepper in a small bowl.
Drain the broad beans while still hot and arrange them on a serving plate, mixing them with the tomato and oil.
Arrange the cubes of Pecorino around these and serve.
