Preparation

Take the pastry (bought ready-to-use), put it onto the pastry board, divide it into two parts and cut from each a fairly thin disk, a little thicker at the edges. Peel the tomatoes, remove the seeds, cut into pieces and distribute over the disks. Sprinkle with abundant oregano, then arrange the torn basil leaves and the chopped garlic. Sprinkle with oil and put onto the oven grid shelf, at the maximum temperature (475°F), for around 15 minutes. There are many variants, such as “Margherita” which is the same with the addition of diced Mozzarella cheese. Other versions are bountiful with the addition of ingredients including anchovies, mushrooms, olives, hard-boiled eggs, ham, etc., etc…
