INGREDIENTI:

- ⅝ lb cornmeal
- ½ lb buckwheat flour
- 7 cups water
- ½ lb Latteria cheese
- ½ lb cheese
- ½ lb butter
- 15 cloves of garlic
- 1 handful coarse salt
PREPARAZIONE:
Bring the salted water to the boil and add a little butter. Add the two flours in a shower stirring constantly, with a steady movement. When half-cooked, add more butter and when the cooking is almost finished (after about an hour) add the cheese and remaining butter in which the cloves of garlic have been sautƩd. Mix well and serve immediately. The polenta should be covered in melted butter.
