  • ¾ lb potatoes
  • ⅝ lb celeriac
  • 3 ½ oz milk
  • 1 ½ oz Groviera cheese , grated
  • ¾ oz butter
  • Extra Virgin Olive Oil
  • salt and pepper
Preparation

Peel the potatoes and celery root. Cut into thin slices that you will steam for about 12 minutes. Then pass the vegetables through a food mill and collect them in a bowl. Add 3 tbsp of oil, the butter, hot milk, salt and pepper. Mix using a whisk to make a soft and airy puree. Divide the puree among small, individual-portion-sized baking dishes. Cover with gruyere and bake in a 425 °F oven for the time needed to broil the cheese.
