INGREDIENTI:

- 10 cups broth
- 1 lb potatoes
- 1 ¾ oz butter
- 1 ¾ oz grated Parmigiano Reggiano cheese
- 4 egg yolks
- 1 pinch nutmeg
- all-purpose flour
PREPARAZIONE:
Boil the potatoes , peel them while still hot, and put them into a preheated bowl. Add the butter and 1/3 of the grated Parmesan, season with generous pinches of salt and nutmeg and make a homogeneous mixture together with the egg yolks. With the palms of the hands floured, form some small cylinders, leave to rest on a floured surface for 30 minutes and then cut into small dumplings. Bring the stock to the boil and toss in the dumplings. As soon as the stock comes back to the boil, remove from the heat and serve immediately accompanied by grated Parmesan on the side.
