INGREDIENTS for 0 people
  • 4 oz prosciutto cotto (cooked ham)
  • 3 ½ oz potatoes
  • 2 carrots
  • 2 zucchini
  • 1 onion
  • 1 handful almonds , in slivers
  • grated Parmigiano Reggiano cheese
  • olive oil
  • salt and pepper
Preparation

Slice the potatoes, carrots, onion and zucchini. Place vegetables (except for the zucchini) in a pan. Cover with a little water. Add salt, pepper and a little oil. Cook until al dente then strain. Cook the sliced zucchini on a hot grill. Prepare 4 little tarts using 3-in ring molds, places on a baking sheet lined with waxed paper. Start with a layer of zucchini, then potatoes, sliced prosciutto, onion, carrots, slice almonds, salt, pepper and grated Parmigiano Reggiano. Finish with a layer of zucchini, sprinkles with Parmigiano. Bake in a 400° F oven for about 15 minutes. Garnish the tarts to your liking and serve.
