INGREDIENTI:

- squash blossom
- egg yolk
- grated Pecorino cheese
- 1 clove of garlic
- extra virgin olive oil
- lemon juice
- saffron
PREPARAZIONE:
Sauté the cloves of garlic in the oil and add the chopped pumpkin flowers. Add a small amount of water and the saffron, and simmer for 10-15 minutes.
Sieve and blend in the egg yolk, Pecorino and some drops of lemon juice. Dress the pasta with a part of the sauce and toss in the pan.
At the end, before serving, add the remaining part of the sauce.
