Rabbit with peppers and olives

INGREDIENTS for 4 people
  • 2 lb rabbit
  • 2 green peppers
  • 7 oz extra virgin olive oil
  • 3 ½ oz black olives
  • 1 onion
  • 1 cup dry white wine
  • salt and pepper
Preparation

Cut the rabbit into pieces.

 

In a large pan brown the chopped onion in oil, add the rabbit and brown it too. Pour in the wine, allow to evaporate and continue to cook covered, adding a little water.

 

Meanwhile brown the peppers cut into quarters in a little oil, and add them to the meat. Then add the pitted olives. In about half an hour the rabbit should be cooked.

Adjust the seasoning if necessary. Serve hot.
