INGREDIENTS for 0 people
  • 1 lb Rice
  • 5 oz lean veal meat
  • 3 ½ oz veal udders
  • 1 ¾ oz butter
  • 3 tablespoons grated Grana Padano cheese
  • ½ onion
  • 1 sprig parsley
  • meat sauce to taste
  • salt to taste
Preparation

Roughly chop parsley and onion and gently sauté in butter: remove the stir-fried vegetables and brown veal and veal udder chopped and mixed together, for a few minutes. Cook rice for ten minutes in meat sauce (must be plentiful: it can be diluted with a bit of stock if necessary), then add the stir-fried vegetables, the browned meat and the cheese.

Once the rice is cooked (rice, “al dente”, should be quite dry) pour into a buttered tin and press with a fork; then put into a hot oven (350°F) until golden brown.
