  • 1 ¼ lb ricotta cheese
  • ⅝ lb whipping cream
  • 4 oz confectioners sugar
  • 4 egg yolks
  • 4 tablespoons Rum
  • 1 tablespoon Marsala wine
Preparation

In a bowl, mix together the ricotta, sugar, egg yolks, rum and Marsala. Whip the cream and carefully fold it into the mixture, using a wooden spoon. Dampen a kitchen towel in cold water and wring out. Place the towel in the bottom of a rectangular cake pan and pour the mixture on top. Place in the refrigerator for at least 3 hours. Unmold by turning it over onto a serving dish.
