  • ⅝ lb all-purpose flour
  • 7 oz potato starch
  • 7 oz sugar
  • 7 oz butter
  • 4 eggs
  • 1 ½ oz fresh yeast
  • 1 lemon
  • milk
  • vanilla
  • salt
Preparation

Heat a glass of milk with half a vanilla pod, which must be removed after 30 minutes, then crumble in the yeast. Pass the two types of flour through a sieve together. Whip the soften butter with sugar, mix in the egg yolks and the sieved flour, stir well; grate the lemon zest and add it to the mixture together with yeast, gently fold in the egg whites whipped to stiff peaks and pour the mixture in a ring-cake tin, previously buttered. Before putting it in the oven, leave to rise in a warm place for 1 hour; then bake at 335°F until cooked (about 40 minutes). If you like, it can be enriched with raisins and candied fruit.
