  • 7 oz ground pork
  • 7 oz ground beef
  • 3 ½ oz pork sausage
  • 3 ½ oz pancetta (italian bacon) , fresh
  • 3 ½ oz carrot
  • 3 ½ oz celery
  • 3 ½ oz onion
  • salt and pepper to taste
  • ⅝ lb canned tomatoes
  • 1 cup dry white wine
  • 2 tablespoons olive oil
Preparation

Sauté the herbs in olive oil (or butter), add the pancetta, sausage and the rest of the meat, chopped. Splash the meat with white wine and allow this to evaporate. Add the tomatoes, crushed, and cook over low heat for about 1 hour.
