  • all-purpose flour
  • extra virgin olive oil
  • 1 tablespoon vinegar
  • salt
Preparation

Clean the dry salt cod fillets of their skin and any bones, and leave to soak under running cold water for 24 hours (if not pre-soaked). Prepare, in an oven-dish, a batter of white flour, salt and water, with some drops of oil and a splash of vinegar, to produce a creamy consistency.

Dry the fillets well using a dish towel, dip them lightly in the flour and then the batter, and toss into the abundant boiling oil. Using a skimmer, keep the fillets immersed until golden. Then drain well on a sheet of absorbent paper (or straw paper) and serve hot.
