Salt Cod Stew
- 1 ¾ lb salt cod , soaked
- 6 cloves of garlic
- 2 cups extra virgin olive oil
Prepare the salt cod in pieces of a suitable size. Put in half a pot of cold water the crushed cloves of garlic, a generous handful of calamint and the ginger in pieces. Put onto the heat and when the water begins to boil, add the extra-virgin olive oil. Leave to boil for about 30 minutes and add the pieces of salt cod to the pot. Leave to simmer for a further 10 minutes or so over very low heat. When the salt cod is cooked, lay some slices of bread in the serving tureen, and pour in the stock and the salt cod. Serve hot.
