  • 5 oz red onion
  • 2 lb green pepper
  • 2 lb tomatoes , ripened
  • olive oil
Preparation

Brown in the olive oil the red onion cut into very thin slices, add the sliced green peppers, brown everything and add the fresh mature tomatoes. Cook the sauce over a very low heat, stirring often, for about an hour and a half. Store in well-sealed glass jars, in a cool place.
