Sautéed Chestnut and Radicchio in Apples
- 8 Golden Delicious apples
- 30 chestnuts , boiled, peeled
- 8 shallots
- 2 heads radicchio from Treviso
- ground pepper
Wash and core the apples. Remove the pulp, leaving about a 1/8th in border. Brush the insides with butter and bake in a 500 °F oven for about 15 minutes.
In the meanwhile, cut off the bottom of the radicchio and slice into fillets. Divide the shallot into pieces and sauté in a pan with butter.
Also add julienned radicchio bottoms and chestnuts. After 5 minutes, add the radicchio leaves, cut into pieces. Season with salt and a little cinnamon.
Remove from the heat and place the sautéed vegetables in the apples. Arrange apples on a serving dish and drizzle with melted butter and sprinkle with freshly ground pepper.
