  • ¾ lb zucchini
  • ½ lb soy sprouts
  • rustic bread
  • 1 tomato
  • 1 spring onion
  • parsley
  • white wine vinegar
  • soy sauce
  • Extra Virgin Olive Oil
  • salt and pepper
Preparation

Wash the zucchini and slice thinly using a mandolin. Wash the sprouts and sauté in a pan with a little oil. After about 2 minutes, add the juliennes zucchini. Season with salt and pepper and cook for about 3 minutes. Cut 8 thin slices of rustic bread and brush with oil. Then toast in the oven. If you like, you can place the bread in a round mold or bowl before toasting. Divide the sautéed vegetables among the plates and garnish with the toast. Drizzle with a dressing made by blending 5 tbsp soy sauce, 3 tbsp vinegar, the tomato pulp, sliced spring onion and finely chopped parsley.
