INGREDIENTS for 0 people
  • 1 bread roll , soaked in milk
  • 1 clove of garlic
  • 2 eggs
  • ¾ oz grated Parmigiano Reggiano cheese
  • ¾ oz grated Pecorino cheese
  • ¾ oz dried mushrooms
  • 1 ¾ oz ricotta cheese
  • 1 tablespoon marjoram , chopped
  • extra virgin olive oil
  • salt and pepper
Preparation

Leave the dried mushrooms immersed in warm water, then chop them together with garlic and marjoram and fry gently in just a little oil. Mix together all the other ingredients, and season with salt and pepper to taste. With this mixture it is possible to stuff: zucchini, baby aubergines, boiled onions, or raw peppers and tomatoes. Lay the hollowed-out, stuffed vegetables in an oiled oven pan and bake in a hot oven at 350°F for about 40 minutes. Serve hot on a serving plate.
