INGREDIENTI: per 0 persone
  • ⅝ lb all-purpose flour
  • fresh yeast
  • 2 zucchini
  • 1 head escarole
  • 3 ½ oz Taleggio cheese
  • 3 ½ oz prosciutto cotto (cooked ham)

  • salt
PREPARAZIONE:

Form a well with the flour on a board and sprinkle with salt. Add 2 tbsp oil and yeast, dissolved in 3 tbsp of warm water. Being mixing the ingredients, adding 6 tbsp of warm water as you go. Knead the dough until smooth. Make a cross on top and let rise, covered in a floured bowl for an hour. Meanwhile, trim the zucchini and cut into round slices. Sauté the zucchini in 3 tbsp of oil with a pinch of salt for 10 minutes. In another pan, sauté the sliced lettuce in 3 tbsp oil. Salt and cook over low heat for 10 to 15 minutes. Roll out the dough into a rectangle, stretching it out with your hands. On top, place the prosciutto slices and then the zucchini. Cover the zucchini with sliced cheese and then the lettuce. Fold over the dough tightly, forming a strudel. Place the strudel on a greased baking sheet. Bake in 400 °F oven for about 30 minutes.
