Preparation

To make this recipe, use small fish, such as small tench, white-fish, perch or small eels. Gut the fish and wash under running water, then cook in a pot in salted water together with the pennyroyal, cloves of garlic, sliced onion, potatoes peeled and cut into pieces, and the mature tomatoes. Cook over low heat and reduce the stock. Slice the stale bread fairly thickly and place in the plates or bowls. Pour on the stock together with some fish, the potatoes and the various flavorings. Leave to rest for some minutes and just before serving, drizzle with raw olive oil.
