  • 1 lb scorpion fish
  • 1 lb sea bass
  • 1 lb whitebait
  • 3 ½ oz crab meat
  • some clam
  • some mussel
  • some sea urchin
  • bechamel to taste
  • some wafer sheet
  • breadcrumbs to taste
Preparation

Boil the scorpion fish, bone them, sieve them, and add to the pre-prepared béchamel. Add the other fish and mollusks, finely chopped and already boiled. Season with salt and pepper: At the end add the raw sea-urchin ovaries. Into each wafer, prepared separately with white flour, put a little filling, then roll them up and close with a wooden toothpick. Fry and serve piping hot.
