  • ⅝ lb spinach , fresh
  • 4 oz fennel
  • 3 artichokes
  • 1 handful capers
  • mustard
  • chervil
  • tarragon
  • chive
  • vinegar
  • Extra Virgin Olive Oil
  • salt
Preparation

Trim the artichokes and remove the outer leaves and fibrous part of the stems. Cut of the tips of the leaves and remove the fury part inside. Then cut into thin slices. Also cut the fennel into thin slices. Wash spinach very well, then drain and place in a salad bowl with the fennel and artichokes. Toss the salad with a dressing made by blending, on high speed, 1 tbsp capers, 1 tbsp mustard, 1 tbsp vinegar, 4 tbsp oil, salt and a pinch of mixed herds. Garnish with a couple of celery leaves.
