  • 1 ¼ lb Porcini Mushrooms
  • 1 clove of garlic
  • 1 sprig mint
  • salt and pepper to taste
  • white pepper to taste
  • ½ lb tomato sauce
Preparation

All mushrooms are suitable for this kind of cooking method. Porcini are best but also other varieties. Once cleaned and broken into pieces, cook them in a sautéed mixture abundant in garlic, calamint, salt and pepper. Some prefer to make it hotter with some chili pepper, but in any case, a little white pepper should be used. Let them become almost overdone before covering liberally with tomato sauce. In cooking, a dense, mouth-watering sauce will form, superb for dressing pasta or to accompany stews. Serve also with boiled potatoes, or to make “crostini” using slices of toasted home-made bread lightly rubbed with garlic.
