  • 1 ¼ lb bread dough
  • 1 lb tomatoes
  • 2 cloves of garlic
  • 2 tablespoons oregano
  • 2 tablespoons thyme
  • 8 leaves of basil
  • 6 tablespoons Extra Virgin Olive Oil
  • all-purpose flour
  • salt

Divide the pizza dough into four equal parts. Place them on a lightly floured pastry board, one at a time. Stretch out the dough using a rolling pin or your hands. Each pizza should be 7 to 8 inches in diameter. Oil a baking sheet and place the pizzas on top. Press the dough with your fingertips, thinning out the central part and leaving the edges slightly thicker. Blanch the tomatoes in boiling water for a minute or two. Then peel and cut in half. Remove the juice and seeds. Then press down on the tomato halves to flatten. Peel the garlic and put through a garlic press. Collect the garlic and its liquid in a bowl. Add thyme, oregano, finely chopped basil and oil, making a liquid, very aromatic sauce. Divide the tomatoes among the pizzas. Sprinkle with salt and pour on the sauce. Cook the pizzas in a 500 °F oven for 8 to 10 minutes.
