  • 1 lb ray fish
  • ½ lb all-purpose flour
  • 1 ½ oz butter
  • 1 egg yolk
  • 4 lemons
  • extra virgin olive oil
  • 1 ¼ cups tomato sauce
Preparation

Cut the skate flesh into fillets, lengthwise. Leave these to marinate in a receptacle with lemon juice and salt. Prepare some dough with the flour, melted butter, egg yolk, a pinch of salt and as much hot water as necessary (the dough should end up quite firm), and leave to rest. Using a rolling pin, roll out two very thin sheets and cut these into squares of 3 inches per side. Wrap the fish fillets in squares of dough, toss them into abundant smoking oil and drain when crispy and nicely golden. Serve garnished with wedges of lemon and hot tomato sauce on the side.
