INGREDIENTS for 4 people
  • 2 lb smooth dogfish
  • olive oil
  • parsley
  • aromatic herb
  • a tbsp of pitted olives
  • 1 anchovy
  • 1 cup white wine
  • all-purpose flour
Preparation

Coat the smooth dogfish steaks in flour, with or without skin and brown them for a few minutes in little oil in a pan.

 

Add immediately the parsley, the herbs, chopped with a mushed anchovy, the olives and then pour the wine over.

Dilute the cooking liquid with a little water. Simmer over very low heat, with the lid on for about 15 min., until cooked.
