Divide the dough into four equal portions. On a floured work surface, form four 8 in disks. Break apart the ricotta, and dice the mozzarella and salame. Place a quarter of each of these ingredients at the center of each disk of dough. Salt lightly and fold dough in half, forming the calzoni. Brush with a little oil. Grease a baking sheet with oil and place the calzoni on top. Bake in a 450 °F oven for 15 to 20 minutes.
