Spicy Fried Sardines

  • 2 lb sardines
  • oil
  • 3 eggs
  • 8 desalted anchovies
  • 1 pinch mustard
  • oregano
  • white pepper
  • 1 tablespoon parsley
  • lemon
  • all-purpose flour

Clean, gut and wash the sardines, eliminating the central bones and the heads. Dry them thoroughly. Prepare a mixture with the anchovy fillets well desalinated, chopped, and mixed with the mustard, parsley, and oregano pounded in a mortar with abundant white pepper (everything slightly diluted with oil and some drops of lemon).

Line up the sardines (open) on a plate, sprinkle with the hot mixture and leave to gain flavor for about 45 minutes. A few minutes before serving, dip them one at a time in the flour and beaten egg, and then fry them in boiling oil.

Drain when crispy and golden, put them on top of a napkin, sprinkle sparingly with very fine salt and then arrange on a serving plate. Garnish with wedges of lemon.
