INGREDIENTI:

- 1 lb spinach
- salt and pepper
- nutmeg
- grated Parmigiano Reggiano cheese
- 4 cups meat broth
- butter
PREPARAZIONE:
After washing well, boil the spinach in salted water, wring out and chop up very finely. In a pan melt the butter, add the spinach, salt, pepper, nutmeg and a generous helping of grated cheese. Mix thoroughly and add, a spoonful at a time, some boiling good quality stock. Serve with fried or toasted bread croutons.
