  • 7 oz sugar peas , boiled
  • 5 oz green salad
  • 3 ½ oz carrot
  • 16 asparagus , boiled
  • 2 egg yolks
  • mint
  • mustard
  • lemon
  • Worcestershire sauce
  • Extra Virgin Olive Oil
  • salt
  • ground pepper
PREPARAZIONE:

Cut the asparagus in half lengthwise and place in a serving dish on a bed of mixed greens. Add the sugar snap peas and carrots, wash, lightly scrapped and trimmed. Just before serving, toss the vegetables with the dressing made from 5 tbsp
