Sweet boiled chestnuts
- 1 lb dried chestnuts
- 2 cups heavy cream
- 1 cup dry white wine , (optional)
- sweet wine , (optional)
Soak the chestnuts in warm water overnight. The day after, drain, rinse them under running water, clean them with a towel or a small brush to remove all the remaining skin, then wash them again. Put the chestnuts in a pot, barely covered in water, and gently simmer them without allowing the water to boil, so that they do not break, until all the liquid is absorbed. If you like, you can add also some wine, half-way through cooking. Once cooked, arrange the chestnuts in dessert bowls, with some of their sweet cooking liquid and some milk or cream.
