Tagliolini with Green Beans and Cacioricotta

INGREDIENTI: per 0 persone
  • ¾ lb tagliolini
  • ⅝ lb green beans
  • 3 tomatoes
  • 1 clove of garlic
  • some basil leaf
  • 1 ¾ oz cacioricotta cheese
  • Extra Virgin Olive Oil
  • salt
Preparation

Trim the ends off the green beans. Rinse and break the long ones in half. Boil in salted water. After about 10 minutes, add the tagliolini to the same pot and cook for another five minutes. While the beans are cooking, prepare a soffritto by sauteing the garlic in the extra virgin olive oil. Add the sauce tomatoes, peeled and cut into chunks and seasoned with basil. Adjust the salt and reduce the sauce a little. Drain the pasta and toss in in the pan with the sauce. Finish with some grated aged cacioricotta cheese, and some that has been sliced thinly.
