INGREDIENTI:

- 2 lb eel
- 1 ¼ lb perch fillets , sheep head
- 1 lb tomatoes , ripened
- 1 cup extra virgin olive oil
- 1 clove of garlic
- chili pepper
- parsley
- salt
PREPARAZIONE:
In a crock pot fry gently in the olive oil the cloves of garlic and the chopped parsley. As soon as the garlic begins to color, add the tomatoes, salt and chili. Cook for 15 minutes. At this point, add the eels and simmer over a low heat for 20 minutes, then add the perch fillets and continue cooking for another 10 minutes. The ātegamaccioā should be served piping hot on slices of toasted bread.
