INGREDIENTS for 0 people
  • 1 lb turnips
  • ½ onion
  • 2 cloves of garlic
  • 3 sprigs parsley
  • 4 desalted anchovies
  • 3 tablespoons Extra Virgin Olive Oil
  • salt
Preparation

Peel the turnips and boil in salted water for about 10 minutes. Meanwhile, deboned the anchovies and finely chop 2 of the 3 bunches of parsley. Heat the oil in a pan. Sauté the finely sliced onion and 2 cloves garlic. Add the anchovies and 2 tbsp water. Break apart the anchovies with a fork. After a minute, add the turnips. Sauté until golden, then finish with the rest of the minced parsley. Garnish the plate of turnips with whole parsley leaves.
