  • 1 lb beef meat
  • 1 slice ham
  • veal meat
  • chicken breast
  • 3 ½ oz butter
  • 3 ½ oz Parmigiano Reggiano cheese
  • 3 oz breadcrumbs
  • 2 eggs
  • 1 handful all-purpose flour
  • broth
  • parsley
  • nutmeg
  • pepper
Preparation

Cut the beef into thin slices. The other ingredients should be chopped to make a mixture to be spread over the slices which then, rolled up tight and tied with kitchen string, are put to cook in a casserole in butter and a little stock, for about 30 minutes. A variant of this recipe uses savoy cabbage. This makes a simple, country-style, but very tasty dish, using savoy cabbage leaves in place of the slices of veal. Yet another variant, known as “uccellini scappati – escaped nestlings”, is made with pork fillet and pancetta and the roll fixed with a tooth-pick.
