- 1 lb beef meat
- 1 slice ham
- veal meat
- chicken breast
- 3 ½ oz butter
- 3 ½ oz Parmigiano Reggiano cheese
- 3 oz breadcrumbs
- 2 eggs
- 1 handful all-purpose flour
- broth
- parsley
- nutmeg
- pepper
PREPARAZIONE:
Cut the beef into thin slices. The other ingredients should be chopped to make a mixture to be spread over the slices which then, rolled up tight and tied with kitchen string, are put to cook in a casserole in butter and a little stock, for about 30 minutes. A variant of this recipe uses savoy cabbage. This makes a simple, country-style, but very tasty dish, using savoy cabbage leaves in place of the slices of veal. Yet another variant, known as āuccellini scappati ā escaped nestlingsā, is made with pork fillet and pancetta and the roll fixed with a tooth-pick.
