Veal slices in tomato and zucchini sauce

INGREDIENTS for 0 people
  • 6 veal scaloppine
  • 2 ½ oz pancetta (italian bacon)
  • 3 ½ oz butter
  • 1 lb zucchini
  • 3 ½ oz grated Parmigiano Reggiano cheese
  • onion
  • tomato sauce
  • all-purpose flour
  • oil
  • salt and pepper
Preparation

Slice the onion and brown it in oil and half of the butter, add the pancetta, previously diced, and the zucchini cut into roundels. Season with salt and pepper. Add the tomato and cook everything for ten minutes or so. Coat the veal slices in flour, brown them separately in the remaining butter and season with salt. Cover the slices with the zucchini sauce, sprinkle the Parmesan cheese over and put in a really hot oven for a few minutes.
