- 2 bell peppers , sweet
- 3 potatoes , peeled
- 2 eggplants
- 2 tomatoes
- 2 stalks celery
- 8 olive verdi , pitted
- 1 onion
- chili pepper , chilly, red
- extra virgin olive oil
- basil
- salt
Preparation
In a pan, stir-fry the chopped onion in a little oil, then gradually add the vegetables, seeded and cut into small pieces. Season with salt and pepper. Cook over a low heat diluting the cooking juices with a little water, if necessary. Serve the “ciambotta” hot after garnishing with fresh basil leaves.
