  • 2 bell peppers , sweet
  • 3 potatoes , peeled
  • 2 eggplants
  • 2 tomatoes
  • 2 stalks celery
  • 8 olive verdi , pitted
  • 1 onion
  • chili pepper , chilly, red
  • extra virgin olive oil
  • basil
  • salt
Preparation

In a pan, stir-fry the chopped onion in a little oil, then gradually add the vegetables, seeded and cut into small pieces. Season with salt and pepper. Cook over a low heat diluting the cooking juices with a little water, if necessary. Serve the “ciambotta” hot after garnishing with fresh basil leaves.
