  • 2 lb honey
  • 5 oz sugar
  • 1 lb almonds , peeled, toasted and crushed
  • 6 egg whites
  • 3 ½ oz vanilla sugar
Preparation

Cook sugar and honey over low heat, and after about 30 minutes of cooking, add the whites whipped to firm peaks and mix to obtain a certain consistency. Add the chopped almonds and the vanilla powdered sugar. Keeping the receptacle hot, remove some small portions to prepare the little sweets. Take a dose and form into a cylinder on the table using wheat starch to avoid it sticking. Cut the portions desired from the warm cylinder to put between the “cialde” wafers. Leave to rest for some hours before serving cold.
