For the ceviche
7 oz monkfish fillet
3 oz red Tropea onion
3.2 oz green bell peppers
4 tomatoes
5 lime
2 cloves of garlic
1 fresh yellow chili
Coriander
chives
Tabasco sauce
Worcestershire sauce
extra virgin olive oil
For guacamole cream
4 soft avocados
2 cups extra virgin olive oil
2 lemons

To garnish
1 pinch hemp
1 pinch linen seeds
1 pinch poppy seeds
1 pinch sesame seeds
1 pinch amaranth seeds
Edible flowers /Shiso sprouts

For the Molecular Spheres

1.35 fl oz tomato juice

Set aside one bowl with fresh water

Add the pasta and cook, then drain and let it cool
Season with oil and lemon
Prepare the Molecular spheres
Marinate the fish
Peel and chop the vegetables, then sautƩ in a pan with oil and garlic
Blend with the pasta
