INGREDIENTI: per 0 persone
  • 2 cups artichoke puree
  • 1 cup heavy cream
  • 6 egg yolks
  • 5 oz butter
  • 1 artichoke
  • 1 ½ cups broth
  • 4 cups Veloute Soup Base
PREPARAZIONE:

Mix the velouté base with the artichoke puree and sieve, pressing with a spatula. Cook until it boils, mix in the yolks diluted with liquid cream, and as soon as it comes back to the boil, take the casserole off the heat, adjust the salt and finish with fresh butter, softened and cut into pieces. Complete the dish with a garnish of artichoke cubes.
