  • ⅝ lb chickpea flour
  • 4 cups water
  • salt
PREPARAZIONE:

Mix the gram flour in a casserole, adding warm water a little at a time, and taking care that lumps do not form. Salt to taste and simmer for at least 1 hour, stirring frequently. “Panissa” can be served hot dressed with oil, lemon and pepper. Or alternatively pour into oiled soup plates, allow to cool, turn out and cut into sticks to be fried in a pan. Or yet again, once cool and cut into cubes, the “Panissa” can also be browned in a casserole containing oil, half an onion and some chopped parsley until golden. Serve hot.
